Happy Thanksgiving!

No Butterball for me this year. This year it's about the Organic, Free-Range, D'artagnan. It's in a brine right now- as per Alton Brown's specifications. I'm already drooling :)

Next year I'm thinking about getting a Heritage Turkey. That's food nerd nirvana for turkeys. Since I'm a food nerd, that's something that just might have to happen (although they cost as much as decent steak per pound.)

One of these years I'm going to get all insane and buy a Turducken- and then deep fry it =-o

I'll have pictures of the bird up tomorrow.

Just made reservations.

Thankfully, I've got a couple of months so I can save up to pay the presumably monumental bill.

L'ESPALIER

Serious business.

"There is no clam superior to the Ipswich clam"

Damn Straight.

I must defend the honor of the Ipswich clam.

Crazy world, that.

French chef throws away Michelin stars to leave kitchen pressure behind

Good luck with that. I can't iamgine the pressure at that level.

Gordon Ramsey

Bloody Hell's Kitchen - The foul-mouthed British chef who could save food TV.
Now that I've eaten at Morimoto… of all the chefs in the world, he might be the one whose food I most want to eat.

They're an Iron Chef ingredient

Banned in the U.S.A. - Sep. 20, 2004

Sichuan peppercorns are banned in the USA, who knew?

$83,000!

An American has splashed out 45,000 pounds (67,000 euros, $83,000) for an eight-course meal for friends at one of the world's finest Indian restaurants, the Daily Telegraph reported Saturday.

That's a serious outlay for a meal. Even stacking on bottle after bottle of something like Petrus, that's tough to do.

Great meal, lousy email management.

Operating what seems an opt-in email list based off of their on-line reservation system it turns out Lala Rokh actually operates an "opt-out" list. GRR. What's worse, the email that info@lalarokh.com forwards to is busted, so I can't be sure my complaints on the matter getting through. Double GRR. Want a good example of how important a good, consumer friendly email policy is? I had a great time there on Saturday night and I can't say enough good things about the food- but because of this I may not go back. I hate "no choice" opt-out lists especially when the people managing it can't manage something as simple as keeping the control email address functional.

fried chicken can be part of a healthy, balanced diet

In a somewhat astonishing press release, the company says it intends to "educate the public" that "fried chicken can be part of a healthy, balanced diet"

If it were only true.

And he calls his men "Chef de Fer!"

Alain Ducasse fears France is slipping in gastronomy - and concocts plan to fight back.
